I had a HUGE craving for mac & cheese a few days ago but didn’t have any cheese. Then I started rummaging in the fridge for substitutions. I came across some roasted red pepper hummus and thought “why not”?
It turned out amazing! Very tasty and creamy.
Here’s what you need:
1.5 cups of macaroni
1 cup of red roasted pepper hummus. I used Sabra hummus from Costco but you can use whatever brand or flavor you’d like.
2 tbsp of milk
3 green onions
Here’s what you need to do:
Boil you favorite macaroni until it’s done to your liking.
Strain. Place back on the burner on low and add the hummus, milk and green onions.
Stir until mixed well. Serve with French bread and a salad or just eat it alone.
