Easy and Delicious Carrot Cake

My son is 6’1″ and about 115 lbs. I am always trying to put some “meat on those bones”. He asked for carrot cake for his birthday so obviously I needed to make that happen. I found this awesome recipe and he loved it!

 

Here’s what you need:

Cake Ingredients

2 cups of flour

1.5 cups of sugar

1 tsp of baking powder

1 tsp of baking soda

1 tsp salt

1 tsp cinnamon

3 cups of grated carrots

1 cup of vegetable oil

4 eggs

Icing Ingredients

3 oz cream cheese

1/4 cup softened butter

1 tsp vanilla

2 cups of icing sugar

 

Here’s what you do:

Cake

Pre-heat oven to 325F

Mix flour, sugar, baking soda, baking powder, salt and cinnamon

Add carrots, eggs and oil

Beat with electric beaters on high for about 2 minutes

Pour into a greased baking dish

Bake at 325F for 50-60 minutes

Use the knife test to make sure it is done

Cool before icing

Icing

Beat cream cheese, butter and vanilla with electric beaters until well blended

Gradually add icing sugar 1/2 cup at a time

Beat until smooth and creamy

Enjoy!
